Vegan Keto Creamed Spinach

This easy and inexpensive side dish uses cauliflower to cream instead of any complicated or expensive dairy substitutes.

Ingredients:

  • 6 ounces cauliflower florets
  • 6 ounces unsweetened almond milk
  • 4 tablespoons olive oil
  • 2 ounces diced onion
  • 1/4 teaspoon granulated garlic
  • 1 pound baby spinach leaves
  • 2 tablespoons tahini
  • 2 tablespoons nutritional yeast
  • Salt and pepper to taste


  • Instructions:

  • Preheat a small saucepan over medium heat. Add the cauliflower and milk. Bring it to a simmer then turn the stove to low and cover the pan with a lid. Let the cauliflower steam for about 10 minutes, then transfer the florets and milk to a food processor or blender. Puree then set aside.
  • Heat the olive oil in a saucepan over medium heat. Add the onion then cook until translucent. Add the garlic, then start adding the spinach. Cook it down in batches until the full amount has wilted. You may want to chop up the spinach a bit beforehand to prevent choking.
  • Mix the cauliflower puree into the spinach. Stir to combine then simmer. Add the tahini, nutritional yeast, then salt and pepper.
  • Keep stirring until the spinach is fully mixed with the cauliflower. Check the seasoning, then serve.

    I aim to keep sides or snacks 6 net carbs or less, and meals around 4-8 carbs. I do around 30 net per day. If you need to lower the net carbs on these recipes I would decrease the size of the portions to do it.
