Vegan Keto Avocado Oil Mayonnaise


Is vegan mayonnaise keto?  Well, it can be!  While there are vegan brands at the store that boast zero carbs, the ingredient list will include things like brown rice syrup.  I'm not super picky about things like canola oil (great for making a neutral flavored mayo) but I also know that some of you like to avoid canola oil while eating a keto diet.

In that spirit I decided to give this mayonnaise a shot.

You won't believe how easy this mayo is to whip up.  At first, I thought it wouldn't work out, but like some kind of blender sorcery this recipe shapes up into a creamy and spreadable mayonnaise.

Make sure that you use a non-dairy milk that has no sweetener or other flavors in it. You'll also want to keep in mind what it tastes like when making your mayonnaise, a strongly flavored milk with alter the flavor of the mayonnaise.

ingredients:


  • 1/2 cup unflavored non-dairy milk, like pea
  • 1 1/2 tablespoons ground golden Flaxseed Meal
  • 2 teaspoons erythritol
  • 2 teaspoon yellow mustard
  • 1 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1 tablespoon unseasoned rice vinegar
  • 1 tablespoon lemon juice
  • 1 cup avocado oil

instructions:


  1. Pour the milk and golden flaxseed into a blender or food processor.  Mix on high for about 1 minute, or until the mixture looks a bit frothy.
  2. Add in the erythritol, mustard, onion powder, salt, vinegar, and lemon juice. Mix again until everything looks well blended, and you can barely see the flecks of flax.
  3. While blending, remove the lid, and slowly drizzle in the avocado oil.  You may have to stop the blender and stir with a spoon once it starts getting too thick.  Adjust seasoning if necessary then store in the fridge.

This recipe is quite filling and comes together fast. No cooking required! I like to garnish with a little extra pumpkin, and low carb chocolate to add a little more color and crunch. You can use any vegan vanilla protein powder, or even try experimenting with other flavors!

Ingredients:



  • 7 ounces firm tofu
  • 1/2 cup canned pumpkin
  • 1 packet superfood protein vanilla
  • 1 cup unsweetened almond milk
  • 2 tablespoons hemp hearts
  • 1tablespoon raw cacao nibs
  • 3 tablespoons granulated Swerve
  • 1 teaspoon pumpkin spice


  • Instructions:



  • Add all ingredients to a blender or food processor.  Puree together until smooth.  The mix will be thick so you may need to scrape down the sides to get everything blended together
  • Garnish with desired toppings and serve!  You can keep the other serving for up to 7 days.

    I aim to keep sides or snacks 6 net carbs or less, and meals around 4-8 carbs. I do around 30 net per day. If you need to lower the net carbs on these recipes I would decrease the size of the portions to do it.

    This easy and inexpensive side dish uses cauliflower to cream instead of any complicated or expensive dairy substitutes.

    Ingredients:

  • 6 ounces cauliflower florets
  • 6 ounces unsweetened almond milk
  • 4 tablespoons olive oil
  • 2 ounces diced onion
  • 1/4 teaspoon granulated garlic
  • 1 pound baby spinach leaves
  • 2 tablespoons tahini
  • 2 tablespoons nutritional yeast
  • Salt and pepper to taste


  • Instructions:

  • Preheat a small saucepan over medium heat. Add the cauliflower and milk. Bring it to a simmer then turn the stove to low and cover the pan with a lid. Let the cauliflower steam for about 10 minutes, then transfer the florets and milk to a food processor or blender. Puree then set aside.
  • Heat the olive oil in a saucepan over medium heat. Add the onion then cook until translucent. Add the garlic, then start adding the spinach. Cook it down in batches until the full amount has wilted. You may want to chop up the spinach a bit beforehand to prevent choking.
  • Mix the cauliflower puree into the spinach. Stir to combine then simmer. Add the tahini, nutritional yeast, then salt and pepper.
  • Keep stirring until the spinach is fully mixed with the cauliflower. Check the seasoning, then serve.
